Dairy Free, Whole Wheat Peach Mango Banana Pecan Craisin Muffins
2 1/4 cup whole wheat flour
3/4 teaspoon baking soda
1/4 teaspoon salt
3 ripe bananas
1/4 cup Silk peach mango “yogurt”
1/4 cup honey
2 large eggs
1/3 cup coconut oil
1 teaspoon vanilla
1/2 cup craisins
1/2 cup chopped pecans
Preheat oven to 350 degrees.
In a large bowl, mash the bananas with a potato masher or fork and mix with yogurt, honey, eggs, coconut oil, and vanilla.
Mix in the flour, baking soda, and salt. Stir in the craisins and pecans.
Spoon batter into approx. 18 lined muffin cups.
Bake for about 30 - 40 minutes or until tops are golden and toothpick or knife comes out clean.
